Rocket Diner 321, a popular food truck operating in the Melbourne area since summer 2020, is set to expand into a permanent location at 2927 W New Haven Ave, Melbourne, FL 32904. Co-owner Ryan Hagy shared the expansion plans with Business Debut.

The new 4,500-square-foot space will be divided into three main areas. One-third will be dedicated to kitchen space, another third will house a 45-seat fast-casual dining room and the remaining space will be a 100-person private event space.

The fast-casual section will feature a drive-thru window, catering to customers looking for quick service. The private event space will host get-togethers, events, business meetings, fundraisers and conferences.

Hagy noted that the food truck will continue to operate, focusing on catering and other events.
