Redwine’s Country Cuisine Bringing Soul Food To Dixie County
Redwine’s Country Cuisine is launching a rotating comfort food truck serving soul food across North Central Florida.
DIXIE COUNTY, FL — Redwine’s Country Cuisine is preparing to launch a new comfort-focused food truck targeting a mid-January opening. Co-owners Jeff Redwine and his mother, Renee Redwine, told Business Debut they are aiming to begin service around January 15, bringing their soul-inspired menu to multiple counties across North Central Florida.
Redwine’s Country Cuisine will rotate locations throughout Dixie, Levy, Gilchrist and Alachua counties, with confirmed stops posted at least 24 hours in advance on Facebook. The team also plans to collaborate with local businesses, setting up at established locations and community hubs.
The truck’s early stops will include a setup at Ace Hardware in Trenton, where Redwine’s Country Cuisine plans to serve lunch during the first weekend of February.
What to Expect
Redwine’s Country Cuisine centers on comfort food. Guests can expect classic soul food sides such as macaroni and cheese, collard greens, fried green beans and fried green tomatoes, along with hearty handheld entrees.
The menu will also include fried pork chops, barbecue cheese fries, burgers, desserts and hand-breaded chicken tenders made from chicken breast or thigh meat rather than pre-battered strips.
Menu and Vision
One of the food truck’s signature items is the Soul Roll, a grab-and-go dish developed specifically for mobile service. Jeff Redwine told Business Debut the Soul Roll comes in several variations, including one filled with oxtail-seasoned rice and collard greens, wrapped in an egg roll wrapper and deep fried, then served with a side of the gravy used to stew the oxtails.
Additional Soul Roll options include a version with smoked pork, macaroni and cheese, fried green beans and barbecue sauce, as well as another featuring macaroni and cheese, bacon and chicken tenders. Recipes are developed jointly by Jeff and Renee Redwine.
"Our goal is to serve the kind of food people think about when they want comfort,” Redwine told Business Debut.

Catering and Breakfast Service
In addition to daily food truck service, Redwine’s Country Cuisine will offer catering for weddings, private parties and business functions. The team said they are equipped to handle events serving up to 300 guests.
The food truck also plans to offer early morning breakfast service at select locations, starting as early as 5 a.m. When breakfast is available, the menu will include a $5 option designed for quick, affordable meals, typically pairing a biscuit sandwich with a drink.
Opening Timeline
The team is targeting a mid-January opening, with January 15 as the current goal.
Hours
Daily locations and hours will vary. The truck expects to operate most consistently Thursday through Saturday, with limited Sunday service reserved for select catering events.
