Picky Eater Charcuterie Bar Launching In Pompano Beach
Picky Eater Charcuterie Bar will offer mobile charcuterie and acai bar catering across South Florida.
POMPANO BEACH, FLORIDA — Picky Eater Charcuterie Bar, a mobile catering concept led by owner Tranessa Edwards, is targeting a late January 2026 launch based out of Pompano Beach in Broward County.
Edwards told Business Debut the business will operate out of a commissary kitchen for preparation only, with services offered throughout Broward County, Miami-Dade County, and Palm Beach County, with the ability to travel elsewhere in Florida as needed.
What to Expect
Picky Eater Charcuterie Bar is designed as a fully mobile charcuterie and acai bar experience rather than a traditional dine-in restaurant. Edwards said the focus is on bringing curated food displays directly to private events, corporate gatherings, weddings and community pop-ups.
At this stage, the Pompano Beach location functions solely as a prep space, allowing Edwards to transport finished setups to client sites across South Florida. There is no storefront service planned at launch.
Menu and Vision
The menu centers on a customizable charcuterie bar featuring artisan cheeses, cured meats, fresh fruits, nuts, bread and crackers, with occasional additions such as chocolate. Edwards also plans to offer a customizable a la carte acai bar with fruits, granola and assorted toppings.
“I would love to be able to create an experience that feels both luxurious and approachable,” Edwards told Business Debut, noting that the concept is designed to feel elevated while still fitting into everyday gatherings.
Clients can choose between different service tiers based on event size, with separate pricing for groups of 50 people or fewer and those with more than 50 guests. In addition to standard charcuterie bars, Edwards plans to offer grazing tables, which feature full tabletop displays layered with fruits, vegetables, cheeses, breads and crackers.
Edwards said vegan options will be available, and she can accommodate kosher requests. Ingredients will be locally sourced when possible.
Ownership and Story
Picky Eater Charcuterie Bar operates as a DBA under Juice by Trend, Edwards’ existing mobile business. Edwards told Business Debut Juice by Trend began after a personal health journey that included a 165-day juice-focused reset starting in 2020, which she said helped reverse multiple health issues.
The charcuterie concept took shape after Edwards saw similar businesses gaining traction online while she was working in a corporate role. After being laid off on Oct. 31, she decided to focus fully on building her own business, prioritizing licensing, permitting, and long-term sustainability.
Community Focus
Edwards said the name Picky Eater Charcuterie Bar was inspired by how people actually eat. “People are really picky,” she told Business Debut, noting that not everyone enjoys the same foods or has the same dietary needs. The concept is built around flexibility, allowing guests to gravitate toward what they like while skipping what they do not.
The menu is designed to accommodate a wide range of preferences, whether someone wants extra fruit, avoids certain cheeses, or needs plant-based options. Edwards said this approach allows her to create a welcoming experience for mixed groups where everyone can find something that works for them.
She also emphasized her passion for fruits and vegetables, which carries over from her Juice by Trend business into the charcuterie concept. Edwards said she is excited to get involved in the local community and share food that feels intentional, visually appealing, and inclusive. “I’m hungry for business and hungry to work,” she told Business Debut.
Hours
Services are booking-based. Edwards said she typically needs four to five days notice for events and has no set days off at this time.
