Paige’s Bistro Expanding to Smyrna Next Month

Set to open early January, the new takeout-only location will bring Paige’s American style comfort food with a Cajun twist to Smyrna.

SMYRNA, GA — Paige's Bistro, an American-style concept with a Cajun twist from owners Craig and Paige Bailey, is targeting a January 5, 2026 opening at 4924 S Cobb Dr SE Suite M, Smyrna, GA 30080, Craig Bailey told Business Debut. The Smyrna storefront will be the brand's second operating storefront, joining its Austell restaurant.

The brand first debuted as a bakery business in February 2019.

What to Expect

The Smyrna location will operate as a takeout-only kitchen along S Cobb Dr between the East West Connector and I-285.

Bailey described the concept as “American style cuisine with a Cajun twist,” noting that Paige's Bistro started as a bakery selling cakes, cheesecakes, and cupcakes before expanding into full meals, he told Business Debut. Paige Bailey leads the in-house bakery program, while Craig oversees the savory menu.

The menu will mirror the brand's existing offerings, anchored by hearty, comfort-driven dishes with Cajun influences. Signature items include the Jacked Up on Mac burger, which Bailey said has been recognized as a top burger by Atlanta Eats TV and Fox 5, and the red velvet chicken and waffles, which has earned multiple awards.

“These meals are different, and people tend to gravitate to them because they like to try different things,” Bailey told Business Debut. Desserts will continue to be baked in-house.

Opening Timeline

The team is targeting a January 5, 2026 go-live date for the Smyrna takeout location. An exact grand opening schedule is to be announced. Paige's Bistro began as a bakery in February 2019, added a food truck in late 2020, and opened its Austell brick-and-mortar restaurant in June 2022.

Looking ahead, Bailey said they aim to open two additional company-owned locations in 2026 and complete a franchising program to support their first franchise locations as early as 2027 or 2028.
