Old Salt Pickling Co. Launching Food Truck in Cape Canaveral
Opening within the next two months, Old Salt Pickling Co. will debut its first food truck in Cape Canaveral.

Old Salt Pickling Co. is gearing up to introduce its inaugural food truck, which is expected to open within the next 30 to 60 days at the BP gas station on 7200 N Atlantic Ave, Cape Canaveral, FL 32920, with operations based out of its commissary at 4900 Florida 524, Cocoa, FL. Co-owner Joshua Lehmann shared with Business Debut that the company is entering the mobile food scene after years of honing its craft in pickling and culinary artistry.
The food truck will primarily operate on Fridays and Saturdays, tentatively from 12 pm – 6 or 7 pm, with plans to extend operating hours as the business gains traction. Their concept focuses on a pickle-forward menu, with a starting lineup of artisanal hot dogs that showcase Old Salt's six signature pickle flavors and homemade mustards. “We're using higher quality ingredients like grass-fed beef and working on developing a New England style hot dog bun,” Lehmann explained. “Everything is made from scratch.” In addition to hot dogs, Joshua and Paige Lehmann aim to expand the menu to feature burgers, steakhouse-style recipes, and offer private event catering.

Initial operations won't include seating, but discussions are underway with a local pizza business for future collaboration that could provide customer seating.
Joshua, a culinary school graduate, and Paige have leveraged their shared culinary passion and local farming roots to create Old Salt Pickling Co. The couple met while working at the Green Turtle Café in Melbourne and decided to pivot from past agricultural challenges to building a scalable, hyper-local pickling brand. Currently, the business operates with a few part-time helpers, with intentions to hire a full-time employee within the next three to six months. “It was actually Paige's idea to start the pickle company. She came up with the name Old Salt, and it just stuck,” Lehmann said. “We love the brand and want to grow it into something our family can carry forward.”
