New Salad Bar and Late-Night Eatery Coming to Jacksonville

A new fast casual salad bar concept is opening soon in Jacksonville, owner Danny Griffin shared with Business Debut in an interview. Lettuce Eat will serve lunch, dinner, and late-night snacks to the bar-going crowd on weekends at 333 E Bay St #113, Jacksonville, FL 32202.

The restaurant, Griffin said, will be centered around a massive salad bar with up to 80 items. Guests will be able to create their own salads or order signature combinations. Expect proteins like chicken, chicken salad, tuna, tuna salad, and more, as well as other cold options such as potato salad, fruit salad, and pasta salad.

Hours will be 10 am–2 pm and 4–8 pm. On weekends, they will reopen from 11 pm–2 am, serving ramen noodles and hot dogs to the late-night club and bar crowd, Griffin said.

The 2,900-square-foot space on East Bay Street is designed to serve as a community and networking hub where people can connect and collaborate. As an entrepreneur, Griffin also plans to host networking events and open mic nights onsite.

With a background in construction, Griffin is offering sponsorship opportunities to fellow construction businesses. Sponsors will have their logos displayed on the wall, and their employees will receive 50% off lunch when wearing a company T-shirt.
