New Restaurant and Rooftop Patio Opening in Marion, NC
The Gref family is bringing a much anticipated location of Copper Penny Grill to Marion this fall.
MARION, NC — Copper Penny Grill is planning a new location at 700 E Court St, Marion, NC 28752, targeting a fall opening. Co-owner Shelly Gref told Business Debut that the business is aiming for October or November.
The Marion restaurant will join the group’s existing locations in Lake Hickory, Forest City and Rutherfordton. Gref co-owns Copper Penny Grill with her husband, Paul Gref. The couple's sons, Hunter and Joshua Gref, have also joined the business. Shelly Gref also wished to highlight Neil Waldron (District Kitchen Manager) and Melisa Williams (District FOH Manager), who have been apart of the business for over nine years and have enabled much of their growth.
What to Expect
Guests can expect a full-service, locals-focused restaurant designed as a gathering place for the community. The Marion spot is planned in a standalone building which will feature a rooftop patio and seats for around 250 guests.
Gref said the team has been looking in Marion for a couple of years for the right opportunity.
Menu and Vision
Copper Penny Grill is a classic American grill with a bar-forward lineup. Gref said the concept pulls from the family’s experience in the restaurant industry, including time with Outback and Miller’s Ale House.
Expect menu items like salads, flatbreads, sandwiches, entrees like cedar plank salmon, pastas, steaks and much more.
The menu will also feature specials. “We have a prime rib night that we’ve done since our inception,” Gref told Business Debut. She added, “we have monthly specials at each location that differ that just give all of our cooks the opportunity to be creative."
The restaurant is also expected to support the company’s catering business, with a large kitchen and space designated for catering operations.
Opening Timeline
The team is targeting an October or November opening. Gref said the project has been through multiple planning meetings, the drawings are with the architect, and the site has been cleared.
The building is owned by G.E.M. Construction, led by Todd Miller, who is also doing the build out.

Hours
Copper Penny Grill is expected to serve lunch and dinner. Gref said current operations are closed Monday and Tuesday and open Wednesday through Sunday, with final hours for the Marion location to be announced.
