ST. AUGUSTINE, FL — Bellatrino Pizzeria is preparing to open a new Italian pizzeria at 59 West Ave, St. Augustine, FL 32084, targeting a late January to early February opening.

Owner John Cooper told Business Debut the restaurant will introduce a family-driven concept centered on authentic Italian food, community connection and an art-filled space designed to feel local from day one.

What to Expect

Bellatrino is an Italian pizzeria with a strong focus on Neapolitan-style, wood-fired pizzas alongside a wide-ranging menu. Guests can expect fresh salads made daily, Italian appetizers, seafood-forward dishes and panini-style sandwiches, and desserts including tiramisu, cannoli and cheesecake.

The St. Augustine location will include indoor seating, outdoor areas and plans for live music, comedy, and community events. The restaurant is pet-friendly and designed to welcome families, groups, and late-night diners traveling along U.S. 1.

Cooper said Bellatrino has been operating since 2012 and is well established in Dallas, TX where it has built a reputation for authenticity. Ingredients are sourced directly from Italy, including flour and sauces, while dough and cheese are made in-house.

Signature pizzas include the Holy Cow, a four-cheese pizza named after customer reactions, and a white pizza with pepperoni. Another highlight is the Texas Cowboy breakfast pizza, topped with eggs, sausage, cheese, and spinach.

“We want it to taste like Italy and feel like home,” Cooper told Business Debut.

Family-Owned and Community-Focused

Bellatrino is named after Cooper’s daughters, Bella and Trinity, and the business is fully family run. His wife, Erin Cooper, is deeply involved in daily operations, along with their children Bella, Trinity, Cole, Will, Dylan, and Connor.

The restaurant also highlights local art throughout the property. Murals by Flagler College alumnus Noah Cook cover the interior, exterior, and food truck, creating a cohesive visual experience meant to reflect both Italian culture and the St. Augustine community.

Food Truck, Catering and Events

Bellatrino will also operate a two-story, wood-fired pizza food truck on-site, primarily supporting late-night service and catering. The truck is designed to function as an extension of the restaurant late night and will be available for weddings, private events and large gatherings.

Cooper said Bellatrino aims to host community groups, open mic nights and special events, offering flexible space for organizations and local gatherings.

Opening Timeline

The team is targeting a late January to early February opening, pending final city approvals.

Hours

Bellatrino is exploring extended hours, with a goal of eventually operating 24 hours a day, seven days a week. Initial hours will be announced closer to opening.
