New Japanese-Peruvian Sushi Concept Opening in Charlotte

Sushi Rosé is expanding the Winston-Salem into Charlotte this winter.

CHARLOTTE, NC — Sushi Rosé is preparing to open at 225 S Poplar St, Charlotte, NC 28202 in the former Haymaker space under the Ascent Towers, co-owner Nevin Anuran told Business Debut.

Construction is roughly 80% to 90% complete, and the team is targeting a mid-February to late February opening, pending permits.

Anuran and his wife, Karen Anuran, own the original Winston-Salem location and are behind the Charlotte expansion.

What to Expect

Anuran described the Uptown location as a two-story restaurant designed to lean into a lounge atmosphere in addition to dinner service. The space is a little under 5,000 square feet and is expected to seat about 120 to 125 guests, not including patio seating.

Upstairs, the restaurant will include a VIP private dining room. Anuran said the goal is an upscale, modern feel.

Sushi Rosé will continue to focus on nikkei cuisine, while expanding into a broader Latin feature at the Charlotte location, Anuran told Business Debut. He said the menu will add dishes with Venezuelan, Argentinian and Brazilian influences alongside the Nikkei offerings.

On Fridays and Saturdays, Anuran said dinner service will transition into an upscale night lounge designed for networking and cocktails. Plans include entertainment such as live music and fire dancers, and a DJ

Opening Timeline

Anuran said construction is expected to wrap by the end of the month, with opening timing dependent on county approvals. The team is currently targeting mid-February to late February.

Hours

Sushi Rosé plans to operate seven days a week at launch, offering dinner service from 4 p.m. — 10 p.m. daily. On Fridays and Saturdays, the lounge programming is expected to run about 9 p.m. — 1 a.m.
