DAHLONEGA, GA — Mosaic Bakery & Pizzeria is preparing to open at 617 N Grove St, Dahlonega, GA 30533 with a targeted launch in late December or early January, co-owner Marsha Cornelius told Business Debut.

Mosaic Bakery & Pizzeria is a 5013c nonprofit bakery and pizzeria that will provide job opportunities and work training for neurodivergent adults and individuals with disabilities.

What to Expect

The concept will begin with a soft-opening phase focused on takeout while the team builds confidence with newly trained employees. The dining room seats about 30 to 40 guests and will open once the staff is ready. As operations expand, the team plans to add dine-in, takeout, and delivery through services such as DoorDash and Uber Eats.

Cornelius said the mission is central to every operational decision. She noted that new employees may require more time and support, and starting smaller allows Mosaic to build a strong foundation before adding additional services.

Mosaic will open with Roman-style sourdough pizza, featuring square pies with both traditional and innovative toppings. Offerings will include classics such as margherita and pepperoni along with more creative options, including a breakfast pizza.

The bakery will begin with sourdough biscuits, all-butter croissants, cookies, scones, country loaves, focaccia, and several rotating items. Cornelius told Business Debut the team plans to expand into more pastries, desserts, and additional bread varieties. Vegan and gluten-free offerings will be added as the bakery grows.

Background and Ownership

Mosaic Bakery & Pizzeria is a 501(c)(3) nonprofit created by Marsha and Greg Cornelius, who also operate the Roundabout Deli in Dahlonega. Their decision to establish Mosaic stems from their experience raising two autistic children and witnessing the lack of long-term employment opportunities for neurodivergent adults.

Cornelius said support typically declines once individuals reach adulthood, leaving many without meaningful job opportunities. The goal is to provide both employment and a pathway to future independence through work training and community education.

Work Training Program

After Mosaic has operated for about a year, the team will introduce a structured training program lasting five to six weeks for individuals who are neurodivergent or have disabilities. Participants will learn general job skills, not only restaurant-specific tasks. Mosaic will work with local employers to help place graduates into long-term roles and to educate businesses on how to support and mentor neurodivergent team members.

Community Support and Remaining Needs

Cornelius said community support has already played an important role in preparing the new space, noting that several local businesses, including another pizzeria, have donated equipment to help Mosaic get started.

As renovations near completion, the team is still in need of a commercial convection oven and additional smallwares for the kitchen. She told Business Debut they are hopeful that more equipment donations will help fill the remaining gaps as they move toward opening day.

Opening Timeline

The team is targeting a late December or early January opening. Renovations are nearing completion, and community support has included donated equipment and materials from local businesses.

Hours

Mosaic will begin with temporary soft-opening hours Tuesday through Friday from 9 a.m. to 3 p.m. Expanded hours will be determined after the team evaluates staffing readiness and community demand.
