PALM COAST, FL - D’Maria Deli & Bakery, a new Mediterranean deli, bakery and sit-down restaurant from Pedro Gorbea and his wife, Maria Montenegro, is preparing to open in mid-February near Valentine’s Day, Gorbea told Business Debut. The restaurant is located at 4984 Palm Coast Pkwy NW, Suites 8 and 9, Palm Coast, FL 32137.

The concept blends culinary traditions from Spain, Italy and Greece, drawing from Gorbea’s personal experiences living, studying and working abroad. The space will include table service seating, a bar area and a deli and bakery counter for faster service and takeaway.

What to Expect

D’Maria Deli & Bakery will offer approximately 50 seats, along with bar seating, and a separate deli and bakery area for guests stopping in for pastries, bread or prepared items. The restaurant is positioned as a fine-dining experience while remaining approachable, with service available throughout the day.

Wine and beer will be served, with no liquor program planned. In the evenings, particularly on weekends, the team plans to feature live music such as Spanish guitar or Italian performers paired with tapas service.

The menu is rooted in Mediterranean cuisine, with a strong emphasis on Spanish, Italian and Greek specialties. Gorbea said guests can expect Spanish jamón serrano, Italian prosciutto and Greek dolmas, along with seafood dishes such as gambas al ajillo, shrimp cooked in olive oil and garlic.

Other offerings will include Spanish-style croquettes, anchovies, Spanish beef meatballs, octopus a la gallega, paella, Atlantic salmon and lobster dishes. A Basque-style chuletón, similar to an American ribeye, is also planned.

Pizza will be another focus, featuring a light, soft dough. Options will include lobster pizza, shrimp pizza, prosciutto pizza and fugaceta, a cheese pizza topped with sautéed onions. Vegetarian pizzas with peppers, olives and onions inspired by Spain and Greece will also be available.

The bakery program will highlight pastries and breads traditional to Spain, Italy and Greece, including croissants and regional fresh breads made in-house.

Ownership and Background

Gorbea, who is opening his first restaurant, comes from a different professional background. He owns Ocean Jewelry in Palm Coast and previously studied and worked as a jeweler in Madrid and Barcelona. During that time, he also worked in several restaurants, including one of Madrid’s most well-known establishments.

“This is a dream that we have,” Gorbea told Business Debut, explaining that his experiences in Spain inspired him to bring a similar dining style to Palm Coast. The business is owned and operated by Gorbea and his wife, Maria Montenegro.

Opening Timeline

The team is targeting a mid-February opening, close to Valentine’s Day.

Hours

D’Maria Deli & Bakery plans to operate daily, offering breakfast, lunch and dinner. Weekday closing times are expected around 10:30 or 11 p.m., with Friday and Saturday hours extending later. On weekends, a late-night tapas service is planned from 10 p.m. until 2 a.m.
