Lumbre Mexican Grill Coming Soon to South Vero Beach

Lumbre Mexican Grill is coming to South Vero Beach and will be located at 626 US-1 b, Vero Beach, FL 32962, right next to a Subway. Owner Ricardo Gamez, a 22-year-old entrepreneur and the franchisee of the next door Subway, told Business Debut that they’ve just received permit approval and are aiming for a three-month buildout. “That's our goal, but anything can happen from now till we actually open,” Gamez said.

Lumbre Mexican Grill will have the create-your-own bowl format but with a twist; it will showcase authentic Mexican cuisine from the state of Michoacán. The menu is expected to highlight flavors true to the region, including tacos, bowls, and other customizable favorites. “Pick up and go most, but we will have tables inside as well,” Gamez explained. The restaurant will also offer beer, keeping the vibe casual and quick.

Gamez, who already owns and operates the Subway franchise next door, has been immersed in the food business from an early age. Initially, he planned to open a small grocery store with a restaurant in the back. However, he focused solely on food due to space limitations and local demand for quick-service meals.

Gamez also credits his love of food, especially his mom’s cooking, as a driving force behind Lumbre. “I love food in general, I mean, who doesn't? But, definitely really love my mom's cooking and not just myself, but other people who try her food. They really, really love it,” he said.
