Croft Seafood is launching a new food truck serving locally sourced seafood across Old Town and nearby counties.

OLD TOWN, FL — Croft Seafood is expanding its local seafood operation with the launch of a new food truck in Old Town, targeting a February opening, owner Hope Croft told Business Debut. The truck will be based at 159 SE 864th Ave, Old Town, FL 32680, and will operate throughout Dixie, Levy and Gilchrist counties, with occasional service in Citrus County, bringing fresh, locally sourced seafood to communities across the region focusing on communities with limited daytime dining options.

“These coastal towns have been hit very hard, and a lot of permanent restaurants are no longer open because of flooding and rebuilding,” Croft told Business Debut. “There’s a real need for daytime food service and affordable lunches in places where nothing is open during the day.”

What to Expect

The food truck is an extension of Croft Seafood’s existing seafood market and fish house, which supplies fresh, Florida-grown products. The menu will center on locally sourced seafood, including oysters, clams and shrimp, with daily specials based on the day’s catch.

“We’ll be serving fresh local seafood provided from our fish house,” Croft told Business Debut. “Some will be aquaculture, some wild. Whatever we’re getting fresh through the market, we’ll be running specials with it.”

In addition to seafood dishes, the truck will offer customizable flatbread pizzas and rotating country-style specials depending on the day.

Menu highlights will include fried shrimp, fried oysters, fried gator tail, oyster stew and gumbo, along with occasional Cajun-inspired dishes. Croft said family recipes play a large role in shaping the menu, including influences from Louisiana.

“My husband really enjoys my fried shrimp and fried gator tail,” she told Business Debut. “One of our favorites is oyster stew, and gumbo is something people really love too. We’ll also have some Cajun stuff. My sister’s from Louisiana, and she’ll be helping sometimes so we can offer a taste of Louisiana.”

Daily specials and seasonal offerings will allow the menu to change based on availability and community needs.

Market and Community Focus

Croft said the mobile concept is designed to support coastal and rural towns that have lost restaurants due to flooding and rebuilding.

“These coastal towns have been hit very hard,” she told Business Debut. “There’s a real need for daytime food service, especially affordable lunches, in places where nothing is open until the evening.”

When not traveling to events or service areas, the truck will be stationed near the Croft Seafood market location in Old Town.

Opening Timeline

The team is targeting a February 14 opening, pending final inspections and setup.

Hours

The truck is expected to operate three to four days per week, generally between 11 a.m. to 5 p.m., with plans to be open Mondays, Wednesdays, Thursdays and Saturdays. Additional service will be provided at events throughout the region.
