Local Caterer to Debut Pastrami Tom's Deli & Grill in Cary
Pastrami Tom's Deli & Grill will provide an East Coast deli experience in Cary.
CARY, NC — Pastrami Tom's Deli & Grill, a fast-casual East Coast style deli from owner Tom Scheidler and partner Tridib Paul, is targeting an opening the week of Christmas at 312 W Chatham St Suites 103 & 104, Cary, NC 27511, Scheidler told Business Debut. The restaurant is awaiting final inspections and will operate in two combined suites to accommodate both the kitchen and dining room.
What to Expect
Pastrami Tom's will follow a fast-casual service model. Guests will order at the counter, receive a table number and have food run to their table. Scheidler said the team is aiming to deliver food in about five to six minutes. The primary dining room will seat about 40 guests.
Additional seating will be available for guests waiting on online or takeout orders, along with an estimated 15 to 20 seats on the patio. Staff will actively manage the dining room to maintain a clean, organized space.

Menu and Vision
Scheidler, who is originally from Cincinnati, Ohio, moved to the Triangle and launched a catering company in 2015 that now regularly feeds college and professional sports teams. While serving teams such as the Durham Bulls and programs at Duke, NC State and UNC, he noticed there were few Northeastern-style deli options in the area for teams traveling from up north.
That gap helped inspire Pastrami Tom's. Rather than call the concept a New York style deli, Scheidler describes it as an East Coast style deli to reflect a broader range of regional influences.
The core menu features specialty deli sandwiches, burgers, patty melts, soups and salads, with seasonal items rotating in. Summer offerings will include lobster rolls and crab cake sandwiches inspired by New England and the Mid-Atlantic, while a Cuban sandwich represents Florida on the permanent menu. Warm roast beef sandwiches, influenced by time Scheidler spent in Boston, are expected to be a staple.
Chef Eddie Passiglia, who is from Long Island, will lead the kitchen and help bring a Northeastern perspective to the deli’s recipes and execution. Over time, the team hopes to grow Pastrami Tom's into four to five locations across the Triangle once the Cary flagship is established.
Opening Timeline
The team is targeting the week of Christmas for opening, pending final inspections. An exact opening date is to be announced.
Hours
During the winter, Pastrami Tom's Deli & Grill plans to open Monday through Thursday from 11 a.m. — 8 p.m. and Friday and Saturday from 11 a.m. — 9 p.m. The restaurant will be closed Sundays but available for private events. Hours may be adjusted seasonally.
