Local Caterer Opening Leefayes Lunchbox in Deltona

DELTONA, FL – Leefayes Lunchbox, a new grab-and-go café concept from longtime caterer Leefayes Catering, is scheduled to open January 11 at 777 Deltona Blvd Suite 8, Deltona, FL 32725, owner Monica Jenkins told Business Debut in a phone interview.

Jenkins said the café will operate from the same kitchen where she currently runs her catering company and will give customers a way to order freshly prepared individual meals throughout the week.

What to Expect

Leefayes Lunchbox will function as a compact café with takeout as the focus. Jenkins plans a small front-of-house area with a cashier station and a few tables. Guests will be able to place an order, grab a seat while food is prepared, and then head back to work with their meals.

The space will also double as a showroom for the catering business. Linens, plateware, glassware and other event items line the walls so clients can see options in person.

Leefayes Catering has operated nearly 11 years and works as a from-scratch kitchen with an extensive menu of about 350 items. She said her team prepares most items in-house and has produced menus ranging from Australian and Peruvian dishes to Latin, Italian, and Caribbean food.

Jenkins plans to translate her catering approach into individual meals and salads prepared to order in a grab-and-go format. Customers will be able to call, text, or walk in to place orders. Jenkins said the focus will be on fresh, made-to-order meals for nearby workers and residents looking for a quick lunch option.

Ownership Background

Leefayes is named for Jenkins’ two grandmothers, Lee and Faye, combining their names into one brand when she launched the catering company. The business is a family-run venture with help from her husband and children.

Opening Timeline

Jenkins plans to launch Leefayes Lunchbox on January 11.

Hours

Leefayes Lunchbox is targeting limited initial hours while the new concept gets established. Jenkins said she expects to open Tuesday through Thursday, likely from 10 a.m. — 2 p.m. or 10 a.m. — 3 p.m.

She plans to maintain her regular catering schedule, including corporate events and weddings, while operating the café during weekday lunch.
