Legal Smoke BBQ Launching a Pop Up in McDonough

MCDONOUGH, GA — Legal Smoke BBQ, a new barbecue pop-up from owner Darryl K Clark, is preparing to launch by the end of the year with plans to operate in McDonough, Atlanta, Decatur and other major cities in Georgia, he told Business Debut. Clark is currently awaiting a custom-built smoker and expects to begin service as soon as it is completed.
What to Expect
Legal Smoke BBQ will operate as a mobile pop-up with the ambition to transition into a brick and mortar. Clark plans to set up primarily in McDonough and the greater Atlanta area. He is already in conversations with local businesses about using their parking lots for regular setups and is exploring opportunities with churches for Sunday events.
Menu and Vision
Clark said guests can expect a straightforward lineup of smoked meats and classic sides. The planned menu includes chicken, ribs, pulled pork and brisket. On the side, he plans to offer baked beans, potato salad and barbecue beans. The focus will be on familiar barbecue staples served in a simple, approachable format that works well for pop-ups and outdoor service.
Opening Timeline
Clark’s custom smoker is under construction and projected to be completed this month. He said he intends to start operating as soon as the smoker is delivered and tested. If the launch does not happen by the end of the year, Clark expects to be up and running by January. Exact first-service dates and locations are still to be announced.
Hours
Clark said he is targeting Wednesday, Thursday, Friday and Saturday for regular pop-ups, with additional Sunday events in partnership with local churches when possible. Specific daily operating hours will be announced closer to launch and may vary by event or location.
