COCOA, FL — Latitudes Waterfront Grill and Oyster Bar is preparing to open at 5370 U.S. Rte 1, Cocoa, FL 32927 as early as the weekend of December 9–10, with a backup target of December 16–17, owner Philip Tretola told Business Debut.

What to Expect

The waterfront property spans more than three acres along the Indian River and features 725 feet of river frontage with views from every seat. The restaurant includes a 40-seat indoor dining room, nearly 100 outdoor seats, a Hawaiian-influenced tiki bar, and a mid-bar with a stage for live entertainment, bar games, and additional dining.

Guests will also find a volleyball court, horseshoe pits, cornhole lanes, and dock-and-dine access for four to five boats, with future plans to expand docking capacity to 12–15 vessels. The restaurant offers direct views of rocket launches from multiple providers, including SpaceX and Blue Origin.

Latitudes will offer two menus: an elevated indoor menu centered on fine dining and a casual outdoor menu for the tiki and mid-bar settings.

Inside, guests can expect dishes such as imported pastas, homemade polenta, braised short rib with a 24-hour braise, and slow-braised pork shanks. The indoor bar will feature martinis and a selection of bourbons, scotches, and tequilas.

The outdoor menu will include burgers, chicken sandwiches, chicken and waffles, poke bowls, flatbreads, and a wide range of seafood offerings. Fresh Florida fish will be central to the menu, including tripletail and mahi mahi, along with several shrimp dishes.

Oysters will be a signature focus. The team will offer oysters on the half shell, steamed oysters, oysters Rockefeller, New Orleans–style grilled oysters, and several additional specialty oyster preparations to continue the property’s long-standing oyster tradition.

Tretola noted the goal of fully restoring the space. “We’ve put a lot of time, effort, and money into this property to bring it back to its former glory,” he told Business Debut.

Team and Acknowledgments

Tretola credited his wife, Renee Tretola, for her role in the project, describing her as essential to the business’s operations. He said she handles decorating, finance, and multiple areas of day-to-day leadership.

He also recognized Richard Madalina of Tru Florida Homes for guiding the construction effort from start to finish. Tretola said Madalina’s building experience and on-site involvement were instrumental in transforming the property during the renovation.

The restaurant is targeting an opening the weekend of December 9–10, with December 16–17 as the alternate date.

Hours

  • Outdoor dining: 11 a.m.–10 p.m.; outdoor bars remain open until midnight with light food available 10 p.m.–12 a.m.
  • Indoor dining: Lunch service 11:30 a.m.–3 p.m.; closed 3–4 p.m.; dinner 4–9 p.m. on weekdays and until 10 p.m. on weekends.
  • Weekend brunch: 10 a.m.–2 p.m., featuring a brunch board with more than 20 items and bottomless mimosas and Bloody Marys.
