Set to open in about three weeks, the food truck will serve burgers, hot dogs, chicken sandwiches, fries, and their signature Knuckle Sandwich.

ORANGE CITY, FL – Knuckle Sandwich, a well-known deli spot in Orange City, is hitting the road with a brand-new food truck expansion. The brick-and-mortar restaurant, located at 475 S Volusia Ave, Orange City, FL 32763, has been serving locals for four years and is now preparing to bring a mobile version of its offerings to nearby communities.

Owner Michael Stridacchio told Business Debut the food truck is expected to launch in about three weeks, pending inspections and paperwork. “We do a lot of catering and mobile events, so utilizing the food truck to move to different locations will be a big asset to us,” Stridacchio said.

A New Chapter for Knuckle Sandwich

Unlike the entire deli-style menu available in the Orange City location, the food truck will specialize in fast and casual items such as hamburgers, hot dogs, chicken sandwiches, fries, and onion rings. Stridacchio stated that the truck will also serve their signature Knuckle Sandwich, which is a pork loin coated in au jus and topped with mayonnaise, lettuce, tomato, Italian hot peppers, and Swiss cheese on a Kaiser roll.

“The restaurant has a wide menu with Cubans, pastrami, and corned beef, but the food truck will be more of a quick-serve option,” Stridacchio explained.

Where to Find the Food Truck

The exact schedule and permanent spots for the truck are still to be determined. Stridacchio said the business is considering locations in DeLand at a car lot and near local Walmart stores. For now, guests can expect flexible hours, with typical service hours likely running from 10 a.m. – 6 p.m., at least five days a week.

Unlike the sit-down experience at Knuckle Sandwich’s main location, the food truck will operate without on-site seating, focusing on grab-and-go meals.

From Sports Marketing to Sandwiches

Before launching Knuckle Sandwich, Stridacchio worked in sports marketing for major leagues and events, including the NFL, NBA, World Series, Super Bowl, and the 1996 Olympics. When that industry changed, he switched to the food business, founding Knuckle Sandwich as a place to "just relax." However, it developed into a thriving restaurant with a devoted following. Four years later, the restaurant is still thriving, and it's ready to expand with its food truck.
