Jatski’s Ice Cream Debuting in Palatka
House-made ice cream, milkshakes, sundaes, waffle cones, floats, and ice cream cakes will highlight the menu at this shop.
PALATKA, FL — Jatski’s Ice Cream is targeting a mid-April opening at 3701-2 Crill Ave., Palatka, FL 32177, where owners Amy and Bill Laakkonen plan to serve house-made ice cream produced on-site. Amy Laakkonen told Business Debut the shop will focus on scratch-made ice cream, grab-and-go service, and a small dine-in setup.
What to Expect
Jatski’s Ice Cream will manufacture its own ice cream at the shop and plans to offer a range of flavors including honey vanilla, cuckoo’s coconut, chocolate velvet, and rum raisin. The shop also plans to serve sundaes, root beer floats, homemade waffle cones, ice cream cakes, pints, milkshakes made with select flavors, and pup cups.

The 1,200-square-foot space will have seating for up to 12 guests. Laakkonen said the business is designed for both quick walk-in orders and customers who want to stay and enjoy their ice cream on-site.
Menu and Vision
The name Jatski’s comes from a Finnish slang word for ice cream, reflecting the family’s heritage. Bill Laakkonen told Business Debut the shop also plans to carry some Finnish items, including licorice, chocolate and other specialty products, as available.
The owners said they wanted to bring “real ice cream” to the Palatka area using dairy mix sourced in Florida, with many ingredients also coming from within the state. “We’re just looking forward to being a part of Palatka and serving wonderful ice cream and getting to know people,” Amy Laakkonen told Business Debut.
Opening Timeline
Jatski’s Ice Cream is targeting a mid-April debut. The owners said this will be the business’s first location.
Hours
Planned hours are 1 p.m.—9 p.m. daily, though the team said it may decide to close on Mondays depending on staffing.
