Japanese Souffle Pancake Concept Opening on UCF's Campus
Fluffy Fluffy will open on UCF's campus with fast-casual service, souffle pancakes, and grab-and-go breakfast items.
ORLANDO, FL — Fluffy Fluffy, the Japanese souffle pancake concept known for its social-media buzz, is preparing to open on the University of Central Florida campus at 4250 W Plaza Drive, Suite H, Orlando, FL 32816. Owner Artie Stoeke told Business Debut he is targeting an early February opening.
Stoeke, who spent 40 years operating Domino’s stores (including two on the UCF campus), said the location sits next to one of his former Domino’s units near the arena. “I’ve been affiliated with UCF for years, and this already feels like home,” he told Business Debut.
What to Expect
The UCF shop will be the brand’s first campus store in the U.S. Fluffy Fluffy specializes in Japanese souffle pancakes, known for their texture and photo-ready presentations. The space will offer fast-casual counter service with 10 to 12 indoor seats and a similar amount of outdoor seating.
To suit campus traffic, Stoeke is building a grab-and-go model inspired by his former Domino’s express store. Guests can choose combo-style meals built around souffle-pancake breakfast sandwiches, croffle sandwiches, tater tots, and coffee drinks. Delivery will also be available.

Menu and Vision
The menu will highlight the brand’s signature souffle pancakes—with popular versions including tiramisu, strawberry, and matcha variations—as well as savory breakfast offerings. The pancakes can be used as the “bun” for items like bacon, egg, and cheese sandwiches. Croffles, made by pressing a croissant in a waffle iron, will feature ham, turkey, bacon, and sausage options.
Stoeke said students enjoy the visual appeal of the dishes. “People take pictures of the pancakes every time. They’re excited to post them and send them to friends,” he told Business Debut.
The location will start with a limited menu, with plans to eventually add the brand’s Eggs Benedict pancakes.
Ownership and Team
Stoeke began working at Domino’s at age 18 and ultimately operated multiple stores before selling his last location in 2024. After visiting Fluffy Fluffy’s Canadian headquarters (where the brand operates 30 to 40 locations) he decided to pursue a new venture that aligned with a younger, campus-driven audience.
Two team members will help lead the store:
- Kayla Stoeke, Stoeke’s daughter and a recent FSU graduate, will help manage the store for its first year before returning to her music therapy career.
- Courtniе Bierman will also manage operations.
“This being the first campus store in the nation is exciting,” Stoeke told Business Debut. “Being around students keeps me young.”
Opening Timeline
Stoeke is targeting an early February opening.

The shop is expected to operate from 9 a.m.–10 p.m., with the potential for later hours depending on student demand.
