Honey's Po'boys and Gumbo Coming to Marietta
After more than 20 years in catering, the family-owned team is opening its first brick-and-mortar restaurant.
MARIETTA, GA – Honey's Po'boys and Gumbo, a Louisiana-inspired restaurant, is under construction at 2667 Powder Springs Rd SW Ste 102, Marietta, GA 30064, owner Angela Randolph told Business Debut. Randolph and her brother and business partner, Lionel Thomas, are preparing the space after over 20 years in the catering business.
The concept pays tribute to their late mother, who dreamt of opening a restaurant. Her nickname was Honey.
Honey's Po'boys and Gumbo Menu
The menu will center on Louisiana po'boys, gumbo and other Louisiana-style dishes, Randolph told Business Debut. She said Honey's Po'boys and Gumbo will also offer New Orleans-style snowballs as a dessert option. The team purchased a traditional ice shaver in New Orleans for that part of the menu, Randolph shared with Business Debut.
Honey's Po'boys and Gumbo will focus on takeout with an estimated 10 to 12 seats for dine-in guests, Randolph told Business Debut. The siblings were born and raised in Louisiana and are bringing that background to the menu. Randolph said they are handling much of the buildout themselves with help from family.
Randolph said their uncle, Isaiah Thomas, 82, is working alongside them on the construction of the restaurant. She said the family wants to acknowledge his role and extend special thanks for his help in getting the space ready.
Randolph said they plan a grand opening event and would like to include a jazz band.
The owners also plan to continue operating their existing catering and concessions work, which includes contracts at Georgia World Congress Center, Georgia International Convention Center and Gateway Center Arena, she said.
Randolph and Thomas previously operated two Subway franchise locations for more than 10 years and closed the final store in 2020, Randolph told Business Debut.
Opening Timeline
Randolph said they are targeting an August opening for Honey's Po'boys and Gumbo. She emphasized that the final date will depend on construction progress, permitting and inspections.
Hours
Randolph said the current plan is to open seven days a week. Proposed hours are 11 a.m. — 9 p.m. Sunday through Thursday and 11 a.m. — 10 p.m. Friday and Saturday, with adjustments possible based on customer traffic.
