Homemade Ice Cream Shop Opening Soon in Land O' Lakes
Cotee River Creamery and Desserts is expanding to Land O' Lakes with homemade ice cream and desserts made daily.
LAND O' LAKES, FL - Michelle Sorensen and George Stacy are preparing to open their third location of Cotee River Creamery and Desserts at 6745 Land O' Lakes Blvd, Land O' Lakes, FL 34638. Stacy told Business Debut the shop is currently waiting on final equipment and approvals, with hopes to open within the next few weeks.
The Land O’ Lakes shop will expand the couple’s growing dessert brand, which already operates two brick-and-mortar locations along with a food truck.
What to Expect
The concept centers around homemade ice cream made daily, along with baked goods and coffee. Guests will be able to choose from about 60 ice cream flavors each day, all made from scratch using recipes Stacy has developed over time.
“We have 60 flavors of ice cream every day,” Stacy told Business Debut. “All of our ice cream is homemade.”
In addition to ice cream, the shop will offer cookies, brownies, cake pops, Buckeyes, Rice Krispie treats, and other desserts. Ice cream cakes and custom ice cream cakes will also be available.
The Land O’ Lakes location will follow the brand’s compact shop format with limited indoor seating and additional outdoor seating. Guests will order at the counter from a digital menu and receive their desserts to enjoy inside or outside.

Menu and Vision
Stacy said the brand focuses on delivering a large variety of house-made flavors while keeping the service simple and fast.
“Customers kept asking for more flavors, so we kept adding them,” Stacy told Business Debut. “I stopped at 60.”
Most of the ice cream recipes have evolved into Stacy’s own formulas after years of experimentation. Many of the baked goods sold in the shop are also made from scratch at the company’s Spring Hill production space.
The owners say their goal is to become a community-focused dessert destination that delivers a consistent, high-quality product.
Opening Timeline
The team is targeting an opening within the next few weeks as they wait for equipment installation and final approvals for the kitchen.
Hours
The Land O' Lakes location is expected to operate seven days a week.
Typical hours will mirror other locations:
- Monday–Thursday: noon – 9 p.m.
- Friday–Saturday: noon – 11 p.m.
