Hilltop Pizza Opening in Canton This March
Hilltop Pizza will offer New York-style pizza, stuffed breads, wings, salads, and fresh dough rolls in Canton.
CANTON, GA — Hilltop Pizza, led by owner Tommy Timmons, is preparing to open in the Free Home Shopping Center at 12424 Cumming Hwy #307, Canton, GA 30115, targeting a mid-March 2025 debut.
Timmons told Business Debut the space is currently in architectural planning as the team finalizes its layout and seating plan.
Menu and Vision
Timmons described Hilltop Pizza as a New York–style pizza shop built on high-quality ingredients with no shortcuts, told Business Debut. “Everything has to go through me before it gets to the customer,” he said.
Pizza will anchor the menu, along with Timmons’ signature stuffed breads—items he developed years ago in New York and refined at his former restaurants. Varieties will include stuffed Italian bread, cheesesteak, chicken parm, and eggplant parm.
The menu will also feature wings, salads, dinner entrées, and rolls made from fresh pizza dough as an alternative to traditional subs. Vegan cheese and cauliflower crust will be available, and the standard dough is naturally vegan.
What to Expect
Hilltop Pizza will operate as a fast-casual concept focused on takeout, delivery, and slices. The restaurant will include a small dine-in area with about 12 seats, pending final layout approval. Timmons will offer in-house delivery in addition to third-party services.
The space will feature a mountain-inspired theme rather than New York–themed décor, drawing inspiration from the surrounding region.
Opening Timeline
Hilltop Pizza is targeting a mid-March opening, with construction and layout planning underway. Timmons is coordinating final details with his architect to determine exact seating and flow.
Hours
The restaurant plans to open Tuesday through Sunday from 11 a.m.—8 p.m., with Friday and Saturday hours extending to 9 p.m. Closed on Mondays.
