Here's the New Brewery and Restaurant Coming to Monticello [Interview]

MONTICELLO, FL — Wolf Oak Brewery And Kitchen, a new nano brewery and restaurant from owner Monya Newmyer, is in development at 190 South Cherry Street, Monticello, FL 32344, Newmyer told Business Debut in a phone interview.
Newmyer said the project centers on brewing beer, cider and wine, and their from-scratch kitchen. All alcoholic beverages will be brewed and fermented on-site.
“My plan is to be open on November 1,” Newmyer told Business Debut, adding that construction and systems work are underway.
What to Expect
Wolf Oak Brewery And Kitchen will operate as a nano brewery with a full kitchen and open layout.
Newmyer said the space will feature indoor seating with an open layout and a patio. Additionally, Wolf Oak will have an open kitchen designed to keep activity visible to guests.
Menu and Vision
Newmyer plans to brew a range of beers on site, including styles designed for local tastes and more experimental options.
“Folks love sours, so I am planning to have sours,” Newmyer shared with Business Debut, adding that there will be at least one Belgian beer on tap. Cider and a bubbly wine will also be fermented in house.
On the food side, the kitchen will bake its own bread and aims to use local ingredients when possible. Newmyer said the menu will include appetizers such as dips, salads, grilled sandwiches, and items like a burger and meatball sandwich.
She also plans crisp baked potatoes with chimichurri sauce as an alternative to fried sides, Newmyer told Business Debut.
Newmyer is an award-winning home brewer. It's been a long-held dream to open a brewery and restaurant like Wolf Oak Brewery and Kitchen.
“Food to me is the first art form,” Newmyer said, describing the brewery as a long-planned project that combines her interest in beer, food, and hospitality.
Opening Timeline
Newmyer is targeting November 1 for opening.
She said kitchen ventilation and brewing system ventilation are scheduled for completion in mid-July, with electrical work targeted for the first week of August.
“That will be the end of my construction and I’ll start brewing,” Newmyer told Business Debut.
