PENSACOLA, FL — Franchisees Rishy and Quint Studer are targeting a mid-May opening for Great Harvest Bread Company at 321 N. DeVilliers St., Pensacola, FL 32502, Rishy Studer told Business Debut. The bakery-cafe will open on the lower level of the Studers’ 24-unit apartment building, with a marketplace the couple also owns operating alongside it.

The Pensacola location will bring Great Harvest’s bakery-cafe model to the area with fresh-milled wheat, breads made on-site and a quick-service format built around breakfast, lunch and grab-and-go offerings. Studer said that they were drawn to the brand’s simple ingredients and on-site milling process, which preserves nutrients and keeps the product as clean and straightforward as possible.

What to Expect

Guests can expect a counter-service setup with electronic menu boards, a sweet case and coffee service, plus about 45 seats inside and additional patio seating out front, Studer told Business Debut. During marketplace hours, customers will also be able to move between the bakery-cafe and the adjacent market space.

Studer said the broader project is designed to serve both apartment residents upstairs and the surrounding neighborhood. The adjoining marketplace is expected to include a wine bar, sweet bar, gelato, produce from a local farmer, flowers and plants from another local vendor, and a yoga studio.

The menu is expected to include breakfast sandwiches, sandwiches, soups, salads, coffee and a range of baked goods, along with whole loaves of bread available for purchase. Studer said favorites such as cinnamon chip bread, muffins, bars, cookies, brownies and tea cakes are part of what attracted her to the brand.

“We’ve been trying to find just the right fit for the lower level for our tenants up above,” Studer told Business Debut. She said the goal was to bring in a food concept she could feel fully behind while creating something healthy and community-focused.

Studer said Scott Hansen, general manager across the Studers’ shops, is overseeing operations. She also noted the family’s broader business organization includes a baseball stadium they operate, and they hope to eventually bring Great Harvest products such as buns into that venue as well.

Opening Timeline

Studer said the opening timeline is tentative, with the team currently hoping to open in mid-May. Hiring is underway, and training support is being provided through the franchise.

Hours

The bakery-cafe is expected to be open 7 a.m. to 5 p.m. Tuesday through Saturday and 7 a.m. to 2 p.m. on Sunday. It is expected to be closed on Mondays.
