Fusillo Italian Pasta Bringing Fresh Bowls To St. Petersburg
Fusillo Italian Pasta is opening a fast-casual St. Petersburg shop serving fresh pasta bowls made daily.
ST. PETERSBURG, FL — Fusillo Italian Pasta is targeting an opening in about two to 2 1/2 months at 905 Central Ave, St. Petersburg, FL 33705, co-founder Giangiacomo “Giangie” Greco told Business Debut. Greco is opening the concept with his business partner and best friend, Alessandro Casali.

What to Expect
Fusillo Italian Pasta is planned as a fast-casual pasta shop serving fresh pasta in easy to carry paper bowls for dine-in, takeout and delivery. Greco said the space is expected to have about 12 indoor seats, with outdoor seating in the works.
Menu and Vision
The menu will focus on fresh pasta made in house each day. Greco said the team plans to offer several pasta types, with sauces prepared to order using a small set of traditional ingredients. The format is intended to keep dishes simple, allowing guests to choose a pasta, sauce and toppings built around classic Italian combinations rather than oversized or heavily customized bowls.
Greco said they will make pasta fresh every day and bring in key ingredients from Italy, including cheeses and cured meats such as pancetta and guanciale, along with Italian flour. The menu is expected to center on classic preparations, with Greco pointing to cacio e pepe as a personal favorite.
“It reminds me of my childhood,” he told Business Debut, referencing growing up in Rome.
Desserts are also planned, including affogato, tiramisu and torta della nonna. Greco said the shop will also offer beer and wine.
Ownership Story
Greco said he and Casali have been best friends since they were children, and the concept is the result of a shared decision to build something of their own in the U.S. Greco said he attended a military academy, served as a captain officer and later worked as a restaurant manager in Milan.
Casali, Greco said, is a former civil engineer who worked as a manager for a major motorway company in Italy. Greco said they initially spent time in Miami before traveling through Florida and choosing St. Petersburg, where they felt the community strongly supports local businesses.
Opening Timeline
Greco said the team expects about two to 2 1/2 months of renovation work before opening. The opening date is to be announced.
Hours
Fusillo Italian Pasta plans to be open seven days a week from 11 a.m. — 9 p.m. Greco said weekend hours may run later, targeting about 11 p.m. or midnight.
