Fresh Chicken and Ice Cream Coming to Cedar Key’s Dock Street

Jaybird's Chicken is set to open by early March at 491 Dock St c, Cedar Key, FL 32625, located on the first floor of the Salinity Hotel, co-owner Shannon Keeton told Business Debut.

This quick-service chicken restaurant will serve wings, tenders, and more to the community. Chef Jordan Keeton will be overseeing the kitchen, Shannon Keeton said.

Keeton, the chef from 83 West in Cedar Key, is contributing his expertise while that restaurant undergoes repairs from Hurricane Helene, with plans to reopen later this year.

In Suite D of the same building, the same owners will launch Dock Street Dips, an ice cream shop offering a variety of sweet treats. Both new spots aim to bring fresh dining options to Cedar Key’s lively Dock Street area.
