Fat Cats Billiards Bringing Pool Hall Concept to Eustis
Guests can expect pool tables, leagues, drinks, and casual snacks at this new Eustis entertainment venue.
EUSTIS, FL — Fat Cats Billiards is targeting an early May opening at 306 W Ardice Ave, Eustis, FL 32726, owner Scott Stoltz told Business Debut. The new venue is set to bring a pool hall-focused concept to the area, with Stoltz saying the closest comparable pool hall is more than 30 minutes away.
What to Expect
Fat Cats Billiards will operate first and foremost as a pool hall, with five leagues expected to play out of the business. Stoltz said guests will be greeted at the front and directed to table assignments, with an emphasis on etiquette and table care as the team works toward its goal of having the best pool tables in Central Florida.
The space will also include a full pro shop for cue repairs, tip replacement, and merchandise. In addition to the main pool setup, guests can expect darts, a golf game, a bar area, and lounge space for those who want to have drinks or spend time there without playing pool.
Menu and Vision
Food service will start in a limited format. Stoltz said the business plans to offer cold finger foods, snacks, candy, sandwiches, chips and salsa, and similar items at opening, while a full kitchen remains a longer-term goal.
For the first month or two, guests will also be allowed to bring in outside food. “We want to be known as a pool hall first,” Stoltz told Business Debut.
Stoltz said Fat Cats Billiards builds on a name already familiar in the area. He previously worked for the former Shay’s Fat Cats in nearby Mount Dora and said he wanted to continue growing that recognition under the Fat Cats name.
Stoltz, who has more than 25 years in the service industry including time with Olive Garden, said the project is a culmination of years working in the local pool hall scene. He also credited general manager Christy Hiles as a key part of the operation. “Wouldn’t be able to do it without her,” he told Business Debut.
Opening Timeline
The business is targeting a grand opening at the beginning of May after construction-related setbacks delayed the timeline. Stoltz said the project is still in buildout.
Hours
Fat Cats Billiards plans to be open daily from 12 p.m.-2 a.m. The venue will welcome all ages until 9 p.m., after which it will shift to 21 and older.
