European Fine Dining Restaurant, Cafe and Bakery Opening in Evans
Nordhavn Rustik will be a dual concept when it debuts this summer.
EVANS, GA — Nordhavn Rustik, a two-part concept combining a Nordic European fine dining restaurant with a European-style bakery and cafe, plans to open in summer 2026 at 406 Town Park Blvd, Evans, GA 30809, owner Dr. John Bojescul told Business Debut.
The project is a ground-up build, with foundation work underway.
What to Expect
Nordhavn Rustik will operate two distinct experiences under one roof: Nordhavn, a fine dining seafood concept with a Nordic and Scandinavian influence, and Rustik, a bakery and deli-style cafe.
While segmented into separate areas, both concepts will share the same kitchen and team, Bojescul told Business Debut. Rustik is also planned to function as overflow dining and a private dining space during evening service.
Menu and Vision
Bojescul described Nordhavn as fine dining with a Nordic seafood focus, built around a menu that is still being finalized. He said the concept is expected to be roughly 70% seafood and 30% meat, with items like cod and halibut among the types of seafood planned, alongside options such as deer, elk, and bison, plus a filet, Bojescul told Business Debut.
Executive chef Justin Hayes will lead the kitchen. Hayes previously served as chef at Cork & Flame, and is a partner in Malia’s in Aiken, Bojescul told Business Debut.
Opening Timeline
The team is targeting a summer 2026 opening, Bojescul told Business Debut.
Ownership
Dr. John Bojescul is a military veteran and a retired orthopedic surgeon. He said that during COVID-19, he began building an investment company to diversify beyond medicine and focus on development projects in commercial real estate.
Bojescul shared that his motivation to debut a restaurant relates to his mother, who was a chef and baker. He said that she worked in Germany for many years and “always wanted to open a restaurant,” but never had the opportunity.
That long-held goal became a personal motivation for him as he developed the concept, pairing it with European influences from his own background, including time spent growing up in Germany and family ties to Norway.
Hours
The initial plan is to operate seven days a week, though specific hours and any potential closures are still to be announced, Bojescul told Business Debut.
The team said daytime service could include lunch service and bakery-and-cafe hours, with final schedules to be tailored closer to opening.
