COCOA BEACH, FL — Eggs Up Grill, owned by franchisee Chris Schmidt, is targeting a mid-December opening at 2023 N Atlantic Ave, Cocoa Beach, FL 32931, he told Business Debut. Schmidt also operates the brand’s Melbourne restaurant and plans to expand beyond Brevard County.

What to Expect

The 4,200-square-foot space will seat about 146, including a small private dining room for 10 to 12 guests. A breakfast bar will face the open kitchen so guests can watch the back-of-house team at work. “We’re targeting mid-December and tracking well to that schedule,” Schmidt told Business Debut.

Eggs Up Grill will serve its all-day breakfast, brunch, and lunch menu. The Cocoa Beach location will offer mimosas, and Schmidt is evaluating an expanded lineup of breakfast cocktails given the area’s visitor traffic. “It won’t be a full bar, but we expect some stronger breakfast cocktails in addition to mimosas,” he told Business Debut.

Market and Growth

This is Schmidt’s second Eggs Up Grill. “I really like the brand—the support and leadership are strong,” he told Business Debut. He said he is exploring additional units outside Brevard County, with specific markets to be announced.

Opening Timeline

Construction is in the final phase, with inspections, flooring, and equipment deliveries underway. Training will begin after final utility connections. Opening is targeted for mid-December; a specific date is to be announced.
