Down the Rabbit Hole Bringing a Parisian Cafe and Lounge to Delray Beach

DELRAY BEACH, FL — Down the Rabbit Hole, a new plant-based café and bar from Dee and chef Samuel Woods, is planned to open in early 2026 at 98 NW 5th Ave, Delray Beach, FL 33444.

Dee told Business Debut the team has received its permit and expects construction to take about six weeks before moving quickly toward opening.

The project comes from the same team behind The Rabbit Hole in Pompano Beach, adapting that plant-based comfort concept into a more beverage- and light-bites-focused format for Delray Beach.

What to Expect

Down the Rabbit Hole will be a smaller, intimate space designed to feel like a Parisian café where guests can linger over drinks, small plates, and live music. In the evenings, the café will shift into a beverage forward setting with a two- or three-piece music ensemble performing in the cozy room.

Dee said she sees the concept filling a gap in the local market, offering a spot that is more relaxed than a full restaurant but more elevated than a traditional bar.

Menu and Vision

Unlike The Rabbit Hole in Pompano Beach, the Delray Beach location will not have a full kitchen, so the focus will be on beverages and light bites. The menu is expected to feature salads, wraps, and a range of plant-based snacks.

On select weekends, the team plans brunch pop-ups using items from The Rabbit Hole’s Pompano Beach menu, including some of its vegan comfort favorites like chicken-and-waffles-style dishes.

These pop-ups are expected to be occasional, potentially once a quarter, with the everyday operation centered on drinks and lighter food.

Opening Timeline

Dee said the team is targeting a first quarter 2026 opening.

Hours

Down the Rabbit Hole is expected to operate seven days a week. Dee said the café will be “pretty much all day” with service running into the evening to support live music and the wine-bar atmosphere.
