Doner Shack Preparing to Open in Tallahassee

TALLAHASSEE, FL - Doner Shack, a United Kingdom-based shawarma franchise with more than 140 locations worldwide, is preparing to open its first U.S. restaurant at 850 S Gadsden St, Tallahassee, FL 32301. Owner Krish Patel and his wife Aditi Patel are targeting a July 10 opening for the fast-casual concept, Patel told Business Debut.

The Tallahassee restaurant will mark the brand’s entry into the American market, with additional U.S. locations expected to follow later this year.

What to Expect

Doner Shack operates as a quick-service restaurant centered on shawarma prepared on traditional vertical rotisseries. Guests can expect options featuring lamb, beef, and chicken shaved fresh from the spit and served in wraps, sandwiches, and bowls.

“It’s big in Europe... the number one shawarma franchise,” Patel told Business Debut. “It’s lamb, beef and chicken slowly cooked in a shawarma, and there’s options for everybody.”

The Tallahassee location will offer seating for about 40 guests inside along with a patio with approximately 12 additional seats. Menu offerings will include chicken tenders, sliders, loaded fries, falafel, and vegetarian-friendly items such as halloumi-style cheese dishes. Desserts and sweets like milkshakes, cookies, and ice cream are also planned.

Menu and Vision

Patel said two standout menu items include the chicken shawarma and the brand’s “OG” sandwich.

“The OG is basically chicken shawarma, lamb, fries, then their garlic sauce and chili sauce,” Patel told Business Debut.

Patel discovered the brand while traveling with his family in Scotland and said the experience immediately caught his attention.

“I was on vacation in Scotland with my wife and kid,” Patel told Business Debut.

“We tried it, loved the food, and I ended up meeting the CEO. They told me their plans to expand in America and I said I would love to bring one to Tallahassee.”

Opening Timeline

The restaurant is targeting a mid-July debut, with Patel currently aiming for a July 10 opening.

The Tallahassee store will be the first Doner Shack location in the United States. Patel said several additional locations are expected to open across the country this year, including in Texas, Nevada, and New Jersey.

Patel added that the restaurant’s location near Cascade Park and several universities positions it well to serve the local community.

“I can’t wait to cater to the whole community and support the students and the schools around here,” Patel told Business Debut.
