DAWSONVILLE, GA – Southern Sassy BBQ plans to launch its food trailer and new commissary kitchen in downtown Dawsonville by the third week of July at 8 Raymond Parks St S, Dawsonville, GA 30534, owner Tina Everett told Business Debut in a phone interview.

Everett has operated Southern Sassy BBQ for about three years while also working at UPS. She retired from UPS last month after 19 years and shifted into barbecue full time, Everett told Business Debut. The Dawsonville location will serve as her base for catering, events and regular food truck service.

What to Expect

Southern Sassy BBQ focuses on pulled pork and smoked chicken. Everett makes her own sauces and dry rub, which she uses on pork, leg quarters and wings, she told Business Debut.

“I do add a lot of smoke to my meat. I want to be able to tell that pork and that chicken has been smoked. I want to taste the smoke,” Everett told Business Debut.

The trailer also serves roasted corn on the cob when it is in season. Everett said that the corn is so flavorful that it doesn't need salt, butter, or any other seasonings.

The Dawsonville space functions as a commissary for the Southern Sassy BBQ food trailer. She will be set up outside of the commissary in downtown Dawsonville Thursday, Fridays and on Saturdays if she doesn't have any events.

“Dawson County has been so welcoming and inviting,” she told Business Debut. She said she expects strong turnout on opening day.

Everett grew up in Dawsonville and still has family in the area. “I'm in a full circle moment, going back to my roots to serve Dawson County,” she told Business Debut.

Opening Timeline

Everett is targeting the third week of July for opening the Dawsonville commissary and full-time food truck operations, she told Business Debut. She said she is preparing for inspections, including a visit from the fire marshal, before opening.

Southern Sassy BBQ has grown from a roadside tent at an O’Reilly Auto Parts location to festivals and now to a dedicated trailer bought with savings from the business, Everett told Business Debut.

Hours

Southern Sassy BBQ plans to operate the food trailer in Dawsonville on Thursdays and Fridays.

Everett said the trailer will also serve in Dawsonville on Saturdays when there are no off-site events booked.
