Organic comfort food, vegan options, and Sunday soul food will anchor this new McDonough restaurant.

CorShana’s Bistro is planning to open soon in McDonough, owner Shana Jenkins shared with Business Debut. The new restaurant is preparing to debut at: 2000 GA SR 42, McDonough, GA 30253, where they will have 75–80 seats inside, events, organic foods, and a legacy honoring Cora, Shana’s grandmother, whom the restaurant is in part named after.

They hope to soft open in late June or early July and host a grand opening on or around July 11, if everything continues smoothly. Once opened, CorShana’s will serve a range of cuisines depending on the day. On Fridays, expect BBQ—from smoked brisket to chicken—along with karaoke. On Sundays, guests will enjoy Soul Food Sundays, Jenkins shared.

During the week, CorShana’s Bistro will serve lunch and dinner. On Thursdays, they will serve breakfast, lunch, and dinner, as well as host trivia night. They will also serve breakfast on Fridays, Saturdays, and Sundays, when they will have a brunch menu as well. Expect outdoor seating and a bar to be part of the lineup.

All of the food, Jenkins reported, will be organic. Their beef will be grass-fed, and they will have menu items to accommodate vegans and those with food allergies and sensitivities.

The recipes and legacy of CorShana’s Bistro have been passed down from Grandma Cora, Jenkins said. She was known for her delicious home-cooked meals, her hospitality, and generosity. In starting the business, Jenkins wished to continuously honor her legacy by serving others well with excellent food.

Jenkins had initially planned to open the restaurant years ago, but COVID interfered. Instead, she began cooking, catering, and serving food directly from her house until her son Vincent Colley Jr. suggested they get a food truck. They opened the CorShana Burgers and Bistro food truck in 2022.

Very much a family business, Jenkins was also inspired by her other children, Victor Roberts and Valencia Johnson, to open the business. As a whole, she expressed gratitude for the entire Roberts family for their contributions to CorShana’s Bistro.

The food truck will continue to run once the brick and mortar is opened. It will likely stake out new areas to test the market for potential brick and mortar spots.
