Community-Focused Coffee Shop Planning for Jacksonville
Mechanism Coffee Roasters plans a second Jacksonville cafe with in-house roasting and a streamlined food menu.
JACKSONVILLE, FL - Mechanism Coffee Roasters is planning a second Jacksonville location at 11003 E Town Pkwy, Jacksonville, FL 32256. Owner Sarah Bigney told Business Debut the new shop builds on the success of the brand’s original Mechanism location, which established its focus on intentional sourcing, in-house roasting and a community-centered cafe experience. Michael Bigney is also an owner of the business.
The team is targeting a spring 2026 opening, with April as a tentative goal.
What to Expect
The E Town Parkway shop is designed as a place to grab coffee and stay awhile, with indoor seating for about 20 to 25 people plus additional outdoor seating for roughly 20 to 30 guests, Bigney said.
The concept follows the brand’s fast-casual model, with space intended for working, studying or meeting up with friends.
Menu and Vision
Mechanism’s coffee program will remain consistent across both locations, featuring drip coffee, pour-overs, espresso drinks, rotating seasonal beverages and house-roasted beans for retail.
“We want people to know that no matter which Mechanism you walk into, the coffee quality and care behind it is the same,” Sarah Bigney told Business Debut.
The E Town location will differ primarily in its food program. Unlike the original shop, which operates with a full scratch kitchen, the new location is being designed with a streamlined menu that fits the space while keeping customer favorites. “Our original location allowed us to really explore food, and we learned a lot from that,” Michael Bigney told Business Debut. “This space lets us focus more on coffee and hospitality, while still offering food that people already love.”
Guests can expect baked goods made in-house, grab-and-go items and a smaller made-to-order selection. Menu staples like bagels with cream cheese, avocado toast and the blackberry goat cheese toast are expected to carry over, along with select lunch options and new items currently in development. “It’s about being thoughtful and realistic with the space, without losing what makes Mechanism feel like Mechanism,” Sarah Bigney told Business Debut.
Opening Timeline
Mechanism is targeting spring 2026 for the E Town location, with April as a potential opening month, Bigney said.
Hours
The current plan is to mirror the original shop’s hours: Monday through Friday 7 a.m. – 2 p.m., and Saturday 8 a.m. – 2 p.m., though Bigney said hours could adjust closer to opening or after launch based on what the community needs.
