Chef Hector Diaz's Chorizo Opening Next Week
Expect Chorizo to open on Monday, November 24th at 4 p.m.
ASHEVILLE, NC — Chorizo, a southern Spanish tapas concept from chef-owner Hector Diaz, is set to open November 24, 2025, at 1 Page Ave, #139, Asheville, NC 28801. Manager Corey Wilson told Business Debut the restaurant will open at 4pm for dinner service that Monday.
Diaz, one of Asheville’s longest-tenured restaurateurs, is opening Chorizo following several other longstanding restaurants in the area.
What to Expect
Chorizo will operate as a sophisticated full-service restaurant and bar with an intimate footprint. The space will seat about 30 to 35 guests inside, with room for roughly 20 more on the patio.
Wilson said guests can expect a sophisticated yet casual and energetic atmosphere designed for lingering over small plates, drinks, and conversation. The team intends Chorizo to function as both a destination for visitors and a neighborhood gathering spot for downtown Asheville.
Menu and Vision
According to the restaurant’s press materials, Chorizo will focus on tapas inspired by southern Spain, with particular emphasis on regions such as Córdoba, Madrid, and Andalusia. The bar program will lean into Spanish wines, sherry, vermouth and a cocktail list designed to complement the food.
“We’re doing tapas-style food with a focus on southern Spain,” Wilson told Business Debut, adding that the menu will be “heavy on seafood and brighter flavors.”
Diaz is also known locally for concepts including Salsas, Modesto, and Bomba, reflecting decades of experience shaping Asheville’s dining scene. Wilson brings additional background from fine dining and brewery work in South Florida and with multiple breweries in Asheville.

To start, Chorizo plans to open Wednesday through Monday from 4–9 p.m. Hours are subject to adjustment after opening.
