Café Bastille to Open New Weston Location This December

Café Bastille Weston will open in December with a full-service brunch menu, croissant-focused dishes, and seating for roughly 110 guests.

WESTON, FL — Café Bastille Weston plans to open in December at 1660 Market St, Weston, FL 33326, Administrative Director Javier Tome told Business Debut.

The new restaurant will become the group’s fourth Café Bastille location in Florida. Business Debut learned of this story first from The Miami New Times.

What to Expect

Café Bastille is a full-service breakfast and brunch restaurant serving guests daily. The Weston location will offer approximately 110 seats and follow the established style and service approach used across the brand’s South Florida locations.

The concept began in 2020, driven by the founders’ desire to create an everyday brunch destination. “The owners always wanted to create a brunch restaurant to satisfy the brunch cravings of our guests every single day of the week,” Tome told Business Debut.

The menu will highlight croissant-based preparations, including benedicts served on croissants instead of traditional bread, along with sandwiches, pancakes, salads, bowls with proteins such as salmon or chicken, and Mediterranean-inspired dishes like shakshuka. Signature pancakes include Nutella and blueberry with mascarpone cream.

“We try to impact our guests with our offer of croissants and sandwiches, and of course the pancakes, which are a staple here,” Tome told Business Debut.

Leadership Background

Tome serves as the corporation’s Administrative Director. He began his career in engineering before transitioning into consulting and later the restaurant industry. He studied culinary arts and has spent 18 years working in both back-of-house and front-of-house roles, progressing from prep cook to sous chef, chef, server, manager, and multi-unit operator.

Café Bastille is owned by Benjamin Amsalem and Estelle Dellegy. The company’s operations are overseen by Director of Operations Francisco Aristy.
