From food truck to brewery, the Rankin family is bringing their vision to life in Quincy, FL.

A new chapter is brewing in Quincy, Florida, as Burned Beard Brewing prepares to open its doors at 10 N Adams St, Quincy, FL 32351, bringing handcrafted beer and family-favorite eats to the city.

Led by Roger Rankin, alongside his wife and co-owner, Bridgette Rankin, the new location continues the Rankin's careers in the food service business. The journey to Burned Beard Brewing began back in 2017, when the Rankin family launched Rankin Tacos, a food truck built on family recipes. The food truck quickly developed a local following and later expanded into a brick-and-mortar restaurant.

A new opportunity emerged that led them to the quiet city of Quincy. “When we announced we were closing [Rankin Tacos in Tallahassee], a lady reached out with a chance to bring something new to Quincy,” Roger explains. They took on the challenge of restoring a historic structure built over a century ago. The process took nearly a year, involving demolition, construction, and numerous permits, with the help of family, especially Roger’s father, Dave Rankin, whose contributions to the renovation were invaluable.

Today the 120-year-old building is nearing completion, featuring a stunning copper-colored, stamped metal ceiling that pays homage to the building’s rich past.

When Burned Beard Brewing opens, guests can expect a small-scale brewery operation featuring a one-barrel brewing system. They will also have a contract brewer in the area.

The kitchen menu will be intentionally focused, celebrating what the Rankins do best: their original taco recipes, alongside burgers, pizzas, and fresh salads.
