Build Your Own Salad Shop Coming To Nocatee

NOCATEE, FL — Salata, the build-your-own salad franchise, is preparing to open at 641 Crosswater Pkwy, Ponte Vedra Beach, FL 32081 on January 26, 2026, Jason O’Hara told Business Debut. The restaurant will be operated by O’Hara and his wife, Sandy O’Hara, marking their first Salata location and the beginning of a planned multi-unit expansion in Jacksonville.

What to Expect

The fast-casual restaurant will offer a fully customizable salad and wrap experience. Guests will choose from several salad bases before moving down the line to select from more than 70 toppings and house-made dressings. The menu will also include soups, bread options such as pita chips and croutons, and a selection of teas and lemonades.

The Nocatee location will have about 24 seats inside and space for 10 to 15 guests on the patio.

Menu and Vision

O’Hara described Salata as a concept rooted in clean eating and healthy choices—an ideal fit for his personal lifestyle and his approach to ownership. “I’m a very health-conscious eater, so it’s something I truly believe in and that I can get behind,” he told Business Debut.

He and Sandy were drawn to the brand after frequenting Salata while traveling and seeing its strong following in markets such as Atlanta and Texas. With more than 100 locations nationwide, they felt the brand had established systems in place while still offering room for meaningful input and long-term growth.

Ownership Background

O’Hara is an experienced multi-unit franchisee, currently operating Jersey Mike’s Subs locations. He noted that Sandy will take a hands-on role in operating Salata, leveraging his experience while building her own leadership within the new brand.

Expansion Plans

The O'Hara's have committed to three Salata locations in Jacksonville and expect to open additional units beyond that territory. “Even though this will be our first, it’s the first of many hopefully,” O’Hara said.

Opening Timeline

The team is targeting a January 26, 2026 opening.
