Groveland, FL — Big Jack’s BBQ Shack, a new (stationary) family-run food trailer, is set to open November 1 at 1050 East Broad St., Groveland, FL 34736. Co-owner Rachel Stanton told Business Debut the mobile eatery will serve smoked meats and Southern-style comfort food made fresh daily.

What to Expect

The bright red trailer with a small porch and two picnic tables will offer takeout and limited outdoor seating. The family plans to operate every day beginning at 11 a.m., staying open until food sells out.

Guests can expect traditional barbecue plates featuring smoked pork chops, brisket, chicken, and pulled pork, along with rotating homestyle sides. A daily special called “What’s in the Pot” will feature a different stew each day, such as chicken and rice or ham and string bean stew in red sauce.

“Everything is fresh, everything is ready that day. When we run out, that’s when we close,” Stanton told Business Debut. Her husband, known as Big Jack, will handle the smoker, while grandchildren will help serve.

The idea came from years of cooking for their large family. “He invented all these sauces because the kids love sauce,” Stanton said. “From sweet and tangy to smoky mesquite and hot, he made them all so the grandkids would eat.” The couple previously ran a similar setup in Loxahatchee, Florida, where their home-cooked barbecue became a local favorite.
