Autrey’s Barbeque Food Truck Rolling Into Crawfordville Soon
Opening within weeks, Autrey’s Barbeque will serve smoked meats, boudin dirty rice, and banana pudding from its new Crawfordville food truck.

CRAWFORDVILLE, FL – Autrey’s Barbeque is preparing to hit the road in Crawfordville with its brand-new food truck, serving up Texas-style barbeque with a chef-driven twist. The truck will be primarily stationed at 650 Woodville Hwy, Crawfordville, FL 32327, with additional stops planned around Crawfordville and Tallahassee.
Owner Brandon Autrey told Business Debut that inspections are the final step before opening. “It could be two weeks, it could be three weeks, but maybe even a month,” he said. “We’re just waiting on the health department for final approval.”
Autrey emphasized a grab-and-go model to maximize consistency and customer experience. For now, delivery services like Uber Eats or DoorDash won’t be available. “I’m kind of an old-school guy that wants people to come and try it for themselves,” he explained. Although he never said never, but for now, he’s all about consistency.
A Chef-Driven Barbeque Concept
Autrey’s Barbeque will bring a unique spin to traditional Texas-style barbeque, smoking meats and vegetables on a 250-gallon offset smoker. The menu balances barbeque classics with elevated appetizers and entrees designed with the help of culinary partner Chris Slagle, who is the creative mind behind the menu.
Appetizers include smoke-fried pork belly bites with roasted red pepper chimichurri, esquites-style elote corn in a cup, and crispy boudin balls with a Creole IPA beer mustard. Entrees go beyond barbeque staples with items like a double smash burger, smoked-fried wings with multiple sauce options, and a classic pulled pork sandwich. A highlighted dish, Autrey said, will be smoked boudin dirty rice topped with Creole aioli.
For dessert, guests can expect a Southern classic: his grandmother’s banana pudding.
From Backyard to Food Truck
Autrey gained work experience in a local restaurant and at Burger King. He then developed a passion for cooking after learning to cook on his own by watching Food Network programs in college. His backyard barbeques (originally for friends) eventually evolved into local gatherings, weddings, and catering jobs. Autrey decided to move forward in 2019 with a dedicated food truck after years of practice and increasing demand.
Opening Hours
The food truck will open on Fridays and Saturdays from 11 a.m. until 8 p.m. or 9 p.m. to ensure food sells out. Fridays and Saturdays will be the food trucks' starting days, and they might move to Thursdays once they’ve assessed how the operation works. There's no available seating in the primary location, but Autrey plans to set up other venues and at some breweries for dining purposes.
