3 Independent Restaurants Opening in Brevard County
Here are three local businesses planning to debut soon in Brevard.
In our last article, we discussed three chain restaurants coming to Brevard County. Now, we've got three independent business that are opening soon across Indian Harbour Beach and Cocoa.

Thai Kazumi & Sushi Bar
Address: 291 E Eau Gallie Blvd, Satellite Beach, FL 32937 (Indian Harbour Beach area)
Status: Coming soon; aiming to open before Christmas following mid-November key handoff and remodel.
What to expect: Compact neighborhood Thai and sushi spot with dine-in, takeout, and delivery; former Chinese takeout getting a small sushi bar and a handful of tables.
Menu highlights: Carryover of Cocoa Beach favorites—curries, noodle dishes, sushi rolls—with a few new noodle additions.
Hours: Planning lunch and dinner seven days a week; exact hours to be announced.
Who’s behind it: Owner Anurak Trisophon; relocation from the recently sold Cocoa Beach location keeps the brand in Brevard County.

Vintage Vault
Address: 114 Harrison St, Cocoa, FL 32922
Status: Coming soon; soft openings mid–late December, grand opening right after New Year.
What to expect: Family-run restaurant and lounge inside the 1928 Barnett Bank building; upscale-meets-casual vibe across two floors, each with its own bar.
Menu highlights: Modern takes on 1920s bar fare—pimento cheese, smoked fish, a unique shrimp cocktail—by a chef who has cooked in 39 states and for Super Bowls.
Hours: Final schedule TBD; plan includes lunch, brunch, and casual evening service, especially on weekends.
Who’s behind it: Victoria and Frank Fuentes with sons John and Andrew; renovations done by the family. Initial seating ~120, potentially up to 150 pending approval.
Latitudes Waterfront Grill & Oyster Bar
Address: 5370 U.S. Rte 1, Cocoa, FL 32927
Status: Coming soon; targeting Dec 9–10, with Dec 16–17 as backup.
What to expect: 3+ acres on the Indian River with 725 ft of frontage, views from every seat, tiki and mid-bars with live music, yard games, and dock-and-dine (expanding from 4–5 to 12–15 slips).
Menu highlights: Two programs—elevated indoor (imported pastas, house polenta, 24-hour braised short rib, pork shanks; martinis and premium spirits) and casual outdoor (burgers, chicken & waffles, poke, flatbreads, Florida fish like tripletail and mahi; multiple shrimp dishes). Oysters are a signature: raw, steamed, Rockefeller, New Orleans–style grilled, and more.
Hours: Outdoor dining 11 a.m.–10 p.m.; outdoor bars open to midnight with light bites 10 p.m.–12 a.m. Indoor lunch 11:30 a.m.–3 p.m.; dinner 4–9 p.m. (weekdays) and until 10 p.m. (weekends). Weekend brunch 10 a.m.–2 p.m. with a 20+ item board and bottomless mimosas/Bloody Marys.
